"Light Omelet with Zucchini&Carrots"
This omelet is light because isn't fried(but baked in oven),
less salt but more spices!
Same result but with low calories|!

2 Zucchini
2 Carrots
1/2 Leek
Cherry tomatoes
1 Tablespoon of Sweet Paprika (Powder)
1 Tablespoon of Ginger (Powder)
5-6 Medium Eggs
1 teaspoon of Table Salt
Oregano
Black Pepper
Oilseed(optional)
Bread Crumbs
Preheat the oven to 392F(200°C)
In a large bowl whisk the eggs with black pepper and a pinch of salt. Meanwhile peal the carrots and slice all the veggies in cubes.
Slice leek thinly...
Take a large pan and add the leek with 1/2 glass of water. After a couple of minutes, add the veggies and a little bit of water again, paprika, ginger and the rest of the salt. Cover the pan until the veggies are completely baked.
Then add the veggies in bowl with the eggs adding the bread crumbs, mix all together and put the mixture in a baking pan with a foil of baking paper.
At last add the oregano, more bread crumbs, cherry tomatoes and if the mixture seems a little bit dry add also 1/4 cup of oilseed.
Bake for 12-15 minutes...
