The Recipe of today is the famous "Pumpkin Pie" but as usual a little bit revised respect the original.
The origins of the "Pumpkin Pie" are of theNorth America/Canada, often eaten during the fall/winter months in occasion of the Thanksgiving and Christmas.
As I said before, my recipe is revised and not like the orginal. The american one is pretty different. Anyway, hope you like it! :)

"Mini Pumpkin Pies" - Recipe #5
3 Medium Eggs
2 Cups of Cane Sugar
2 Tablespoons of Cinnamon (powder)
2 Tablespoons of Ginger (powder)
15 Walnuts (toasted and crumbled)
20 Almonds (toasted and crumbled)
2 Teaspoons of Baking Powder
3 cups of Pastry Flour
1/4 Teaspoon of Salt
1 Cup of Oilseed
Preheat oven to 356°F(180°C)
Separate the eggs (in whites and yolks) in two different bowls.
In the bowl with yolks add as first the sugar, cinnamon, ginger, oil and whisk all together.Then , in the same bowl, add the grated pumpkin, almonds and walnut and the baking soda.
In another bowl beat the egg whites until foamy and then fold the egg whites into the mixture.
Fill the baking pan with the mixture and bake for about 20/25minutes.
